I must admit...I'm not a measurer...I eyeball everything, so everything is an estimate/to taste. I also change it up depending on what I have on hand (i.e. 1 whole pepper, no hot peppers.) Also, it's so tasty I've never actually gotten to take a picture of it!! It's always gone within 20 minutes of making it, so I chose a picture of some finely chopped veggies, which I sometimes chop even finer to give every bite a little crunch!
Ingredients:
4-6 servings white or brown rice (I'm lazy and to save time I just use Minute Rice)
1 egg
sprinkle of salt & pepper
2 tbsp butter or olive oil
1/2 onion, finely shopped
1/2 red pepper, finely chopped
1/2 green pepper, finely chopped
1 small hot pepper (jalepenos, chili, habenero etc...use to taste, optional)
1-2 crushed garlic cloves
approx 1 tsp. cajun seasoning, then more to taste (I like McCormack's)
House of Tsangs Spicy Szechuan Stir Fry Sauce, to taste
Soy Sauce, to taste
While rice is cooking, scramble egg in a pan with salt & pepper until cooked. Crumble and set egg aside. In a large skillet, heat butter/oil on medium heat. Add onions and cook until translucent. Add peppers, but be sure not to over cook the onions! Add garlic and cook for 2 minutes. When rice is done, add soy sauce directly onto the rice. I like to barely coat the top of the rice. Sprinkle the rice with about a teaspoon of cajun seasoning. Add rice and egg to onion mixture. Add 1 tablespoon of the Stir-fry sauce, cook in skillet on medium heat for about 5 minutes. Taste, and add soy sauce, stir-fry sauce, and cajun seasoning to your liking (I tend to always add more!!). Enjoy my secret recipe, and everyone's favorite Spicy Fried Rice!!
