Fiber One Honey Cluster Chicken Nuggets

Ingredients

1 lb Chicken Breast
a few tablespoons of flour
2 eggs
1/2 cup milk
1 cup fiber one cereal
1/2 cup panko breadcrumbs, plain
pinch of salt, pepper, and any additional seasoning

Instructions:

Pre-heat oven to 375 degrees

1. Chop up chicken breasts into desired sized pieces. I like to cut them into about 1/2-1 inch cubes
2. Coat the chicken pieces in flour
3. Beat the egg and milk in a bowl
4. Soak the flour coated chicken pieces in the egg and milk mixture. The longer you soak, the more the coating will stick!
5. Crush and blend the cereal and breadcrumbs, as well as any other seasonings you may choose to use (I use my Nutribullet's milling setting to do this...the fine breadcrumbs tend to stick better than the regularly sized panko)
6. Coat the egg soaked chicken pieces in the breadcrumb mixture
7. Place the coated chicken pieces on a parchment paper lined cookie sheet or pan
8. Bake the chicken pieces for 15-20 minutes or until golden and crispy

I personally like to dip these in maple syrup. My boyfriend prefers dipping his in hot sauce. Please share if you have other suggestions!

Keri's Secret 30 Minute Spicy Fried Rice

I must admit...I'm not a measurer...I eyeball everything, so everything is an estimate/to taste. I also change it up depending on what I have on hand (i.e. 1 whole pepper, no hot peppers.) Also, it's so tasty I've never actually gotten to take a picture of it!! It's always gone within 20 minutes of making it, so I chose a picture of some finely chopped veggies, which I sometimes chop even finer to give every bite a little crunch!
Ingredients:
4-6 servings white or brown rice (I'm lazy and to save time I just use Minute Rice)
1 egg
sprinkle of salt & pepper
2 tbsp butter or olive oil
1/2 onion, finely shopped
1/2 red pepper, finely chopped
1/2 green pepper, finely chopped
1 small hot pepper (jalepenos, chili, habenero etc...use to taste, optional)
1-2 crushed garlic cloves
approx 1 tsp. cajun seasoning, then more to taste (I like McCormack's)
House of Tsangs Spicy Szechuan Stir Fry Sauce, to taste
Soy Sauce, to taste

While rice is cooking, scramble egg in a pan with salt & pepper until cooked. Crumble and set egg aside. In a large skillet, heat butter/oil on medium heat. Add onions and cook until translucent. Add peppers, but be sure not to over cook the onions! Add garlic and cook for 2 minutes. When rice is done, add soy sauce directly onto the rice. I like to barely coat the top of the rice. Sprinkle the rice with about a teaspoon of cajun seasoning. Add rice and egg to onion mixture. Add 1 tablespoon of the Stir-fry sauce, cook in skillet on medium heat for about 5 minutes. Taste, and add soy sauce, stir-fry sauce, and cajun seasoning to your liking (I tend to always add more!!). Enjoy my secret recipe, and everyone's favorite Spicy Fried Rice!!

Secret Ingredient Burgers

Ingredients:
1 1/2 lb lean ground beef
1 onion
1 egg
2 tbsp dijon mustard
2 tsp worcestershire sauce
2 cloves garlic
salt & pepper to taste
Optional: Breadcrumbs, Cayenne Pepper, and/or milk

Directions: Chop onion and garlic.  Slightly Beat egg. Combine all Ingredients and form into patties. Cook on the grill 5 minutes per side, or in an oven preheated to 350 degree for 30-40 minutes (check with a meat thermometer).  Serve with your favorite toppings on your bun of choice, or enjoy alone!

Hasselback Potatoes

Ingredients:
Baked Potatoes
melted butter and/or olive oil
salt
pepper
garlic
cajun spices (optional)


Preheat the oven to 425 degrees.
Start by peeling your potatoes. Cut one side of the potato so that it has a flat bottom (this is so it will lay flat in the oven, you may want to do this before you start peeling to save time.) Cut slices into the unflat side of the potato...i like mine thin so they get extra crispy. Place each potato in its own aluminum foil square. Pour butter (or oil) between the slices and all around the potato.  Slice the garlic and put slices in between some of the slices of the potato.  Sprinkle the other seasonings on top. Close the aluminum foil square and bake the potatoes for 40 minutes.  Open up the foil and check the potatoes with a fork (if it goes through easily the potato is cooked, if its still hard, bake for longer.) Keeping the foil open, bake the potatoes an extra 10 minutes or until crispy (the bottom should get crispy as well.)  Serve hot!

Keri's Famous Vat of Meaty Chili

2 1/2 lbs lean ground beef
1 green pepper
1 red pepper
1 yellow pepper
1-2 onions
2 tbsp oil
2-4 clove garlic, crushed
2 28oz cans crushed tomatoes
1/2 c water, more or less depending on thickness
1/4 c chili powder
2 tsp cumin
1/8 tsp cinnamon or cocoa powder
1 tbsp chopped basil
1 tsp salt
1 tsp black pepper
1 tsp cayenne pepper or hot sauce
1-2 bay leaves
1 tsp brown sugar
shredded cheddar cheese
sour cream
tortilla chips
brown rice
corn bread

Finely chop all vegetables. Heat oil in a large skillet on medium heat. Add onions and cook until translucent. Add beef to onions. Brown the meat.  Add chopped peppers. Cook until soft. Add crushed garlic and cook for an additional two minutes.  Transfer into a large pot and heat on medium-high. Add tomatoes, water, and all seasonings.  Bring to a boil, let boil for 5 minutes, then reduce heat to low. Let chili simmer for at least 2 hours.  Serve with brown rice, cheddar cheese, sour cream, chips, and/or corn bread.

Keri's Famous Meatballs

1 1/2 lbs lean beef
1 egg, slightly beaten
1/2 c breadcrumbs, italian seasoned or unseasoned
1 medium onion, finely chopped
2-3 cloves garlic, crushed
1 tsp. salt
1 tsp. pepper
1/2 c milk or cream
1 teaspoon oregano (more if breadcrumbs are unseasoned) or italian seasoning
2-3 tbsp chopped basil leaves
1/4 c grated cheese--parmesan, romano, locatelli etc.
1/2 c tomato sauce
2 tbsp oil
2 jars of sauce or 4-6 cups of sauce
your favorite pasta, or a loaf of garlic bread and mozz cheese for heros


Heat the oven to 350 degrees.
Step One: Mix all ingredients in blue in a large bowl
Step Two: Roll the meat mixture into balls, size is up to you
Step Three: Heat the oil in a skillet on medium heat. Fry the meatballs in batches until their edges are crispy, about 6 min each
Step Four: After frying, lay the meatballs on a paper towel to drain the excess oil.
Step Five: Place the meatballs on a tray or in a dish to bake for 15-20 min.
Step Six: While the meatballs are in the oven, heat the sauce over the stove.
Step Seven: Let the meatballs sit in the sauce on low heat for at least a half an hour...the longer the better!

Serve with your favorite pasta or on garlic bread with some grated mozz for an amazing meatball hero!
